  • 6 large carrots, peeled and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp chopped fresh tarragon
  • Salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large bowl, whisk together olive oil, honey, tarragon, salt, and pepper.

  3. Add carrots to the bowl and toss to coat evenly.

  4. Spread carrots in a single layer on a baking sheet.

  5. Roast in the oven for 20-25 minutes, until tender and slightly browned.

  6. Serve hot and garnish with additional fresh tarragon if desired.
