  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup unsalted butter, chilled and cubed
  • 1/2 cup dried cranberries
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 tbsp orange zest
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.

  3. Add chilled butter to the flour mixture and use a pastry cutter or your hands to cut it into the flour until it resembles coarse crumbs.

  4. Add dried cranberries to the mixture and stir gently to combine.

  5. In a separate mixing bowl, whisk together heavy cream, egg, orange zest, and orange juice.

  6. Add the wet ingredients to the dry ingredients and mix until a dough forms.

  7. Transfer dough to a floured surface and form into a circle about 1 inch thick.

  8. Use a sharp knife or pastry cutter to cut the circle into 8 wedges.

  9. Transfer the wedges to the prepared baking sheet and brush with additional heavy cream.

  10. Bake for 18-20 minutes or until lightly golden brown on top.
