Serves:
Ingredients
- 2 cups of all-purpose flour
- 1/4 cup of granulated sugar
- 1 tbsp of baking powder
- 1/4 tsp of salt
- 1/2 cup of cold unsalted butter, diced
- 1/2 cup of dried cranberries
- 3/4 cup of milk
- 1 tsp of vanilla extract
Instructions
-
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
-
In a large bowl, combine the flour, sugar, baking powder, and salt. Cut the cold butter into the mixture until it resembles coarse crumbs.
-
Stir in the dried cranberries.
-
In a separate bowl, whisk together the milk and vanilla extract. Slowly add the wet ingredients to the dry ingredients, stirring until just combined.
-
Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Don’t overwork the dough.
-
Pat the dough into a 1-inch thick circle. Use a sharp knife or a round cookie cutter to cut the dough into scones.
-
Place the scones onto the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
-
Remove from the oven and let the scones cool on a wire rack before serving.
