Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 cup red lentils
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat some oil and sauté the onion and garlic until translucent.

  2. Add the cauliflower florets, lentils, curry powder, cumin, and turmeric. Stir to coat the ingredients with the spices.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes until the cauliflower and lentils are tender.

  4. Use an immersion blender or a regular blender to puree the soup until smooth.

  5. Stir in the coconut milk and season with salt and pepper to taste. Cook for another 5 minutes.

  6. Serve hot, garnished with fresh cilantro.
