How To Make Lentil & Sweet Potato Curry

Ingredients
- 1 cup red lentils
- 1 large sweet potato, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 1 can coconut milk
- 2 cups vegetable broth
- 1 tbsp oil
- Salt to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat oil over medium heat. Add onions and garlic, cook until onions are translucent.

Add curry powder, turmeric powder, cumin powder, and garam masala. Stir well to coat the onions and garlic with the spices.

Add lentils, sweet potatoes, coconut milk, and vegetable broth. Stir to combine.

Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils and sweet potatoes are tender.

Season with salt to taste.
