How To Make Easy Lentil Curry

Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 can (400ml) coconut milk
- 1 cup vegetable broth
- 1 tbsp oil
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat the oil over medium heat. Add the onion and garlic and cook until softened.

Add the curry powder, cumin, and turmeric to the pot and cook for another minute.

Add the lentils, coconut milk, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.

Season with salt to taste.

Serve the lentil curry over rice or with naan bread. Garnish with fresh cilantro.
