How To Make Lentil & Cauliflower Curry

Ingredients
- 1 cup red lentils
- 1 small cauliflower, cut into florets
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tbsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 1 can coconut milk
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
Instructions

Rinse the lentils and soak them in water for 10 minutes. Drain and set aside.

In a large pot, heat some oil and sauté the onion and garlic until translucent.

Add the curry powder, cumin, and turmeric and cook for another minute.

Add the cauliflower, lentils, and coconut milk to the pot. Stir well to combine.

Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils and cauliflower are tender.

Season with salt and pepper to taste.

Serve the lentil and cauliflower curry over cooked rice or with naan bread.

Garnish with fresh cilantro.
