- 1 pound carrots, peeled and trimmed
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
