How To Make Lentil Tacos with Avocado Crema

A delicious and healthy take on traditional tacos with a flavorful lentil filling and creamy avocado crema.

  • 1 cup dried lentils, rinsed and drained
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • 1 cup vegetable broth
  • 8 taco shells
  • 1 avocado, peeled and pitted
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh cilantro
  • 1 tbsp lime juice


  1. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until softened.

  2. Add the lentils, paprika, chili powder, cumin, salt, and pepper to the skillet. Stir to combine.

  3. Pour in the vegetable broth and bring to a simmer. Reduce the heat to low and cook for 20-25 minutes until the lentils are tender and the liquid has been absorbed.

  4. In a blender or food processor, combine the avocado, Greek yogurt, cilantro, lime juice, and a pinch of salt. Pulse until smooth and creamy.

  5. To assemble the tacos, place a spoonful of the lentil mixture into each taco shell. Top with the avocado crema and any additional toppings of your choice.

  6. Enjoy!
