Ingredients

  • 1 cup lentils
  • 1 cup Basmati rice
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp cumin
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a pot, heat olive oil and cook onions until translucent. Add garlic and cook for another minute.

  2. Add cumin, turmeric, and paprika. Stir to coat onions well.

  3. Add lentils and rice, stir well to combine.

  4. Add vegetable broth and bring to a boil. Reduce heat to a simmer, cover, and cook until rice is cooked through, about 30-40 minutes.

  5. Season with salt and pepper to taste. Garnish with chopped parsley.
