How To Make Spicy Lentil Curry Recipe

This lentil curry is a spicy and flavorful dish that can be served with rice or bread.

Serves:

Ingredients

  • 1 cup of red lentils
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 tsp of ground cumin
  • 1 tsp of ground coriander
  • 1 tsp of turmeric
  • 1/2 tsp of cayenne pepper
  • 2 cups of vegetable broth
  • 1 can of diced tomatoes
  • 1 tbsp of olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse lentils and set aside.

  2. In a pot, heat olive oil over medium heat and add onion and garlic. Cook until softened.

  3. Add cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Stir well.

  4. Add lentils, vegetable broth, and diced tomatoes to the pot. Bring to a boil and then reduce heat to low. Cover and simmer for 25-30 minutes, or until lentils are tender.

  5. Garnish with fresh cilantro and serve.
