How To Make Lentil and Vegetable Soup Recipe

A hearty and nutritious soup packed with protein, fiber and vegetables.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 cup dried green lentils
  • 4 cups vegetable stock
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onions and garlic, sauté until fragrant.

  3. Add carrots and celery, cook for few minutes until tender.

  4. Add lentils, vegetable stock, diced tomatoes, thyme, salt and pepper to the pot.

  5. Bring to a boil then reduce heat, and simmer for 20-25 minutes, until lentils are tender.

  6. Serve with fresh parsley on top.
