How To Make Mediterranean Lentil Salad
A healthy, flavorful salad that combines the classic flavors of the Mediterranean.
Serves:
Ingredients
- 1 cup of lentils
- 2 cups of water
- 1/2 red onion, chopped
- 1/2 red bell pepper, chopped
- 1/2 cucumber, chopped
- 1/4 cup of kalamata olives, chopped
- 1/4 cup of crumbled feta cheese
- 2 tbsp of red wine vinegar
- 1 tsp of dried oregano
- Salt and pepper to taste
Instructions

Rinse and drain the lentils. Place in a pot with 2 cups of water and bring to a boil. Reduce heat, cover and simmer for 20 minutes or until the lentils are tender.

In a large mixing bowl, combine the lentils, red onion, red bell pepper, cucumber, kalamata olives, and feta cheese.

In a small bowl, whisk together the red wine vinegar, oregano, salt, and pepper.

Pour the dressing over the salad. Mix well to combine.

Chill for at least 30 minutes before serving.
