How To Make Mediterranean Lentil Salad

A healthy, flavorful salad that combines the classic flavors of the Mediterranean.

Serves:

Ingredients

  • 1 cup of lentils
  • 2 cups of water
  • 1/2 red onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 cucumber, chopped
  • 1/4 cup of kalamata olives, chopped
  • 1/4 cup of crumbled feta cheese
  • 2 tbsp of red wine vinegar
  • 1 tsp of dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the lentils. Place in a pot with 2 cups of water and bring to a boil. Reduce heat, cover and simmer for 20 minutes or until the lentils are tender.

  2. In a large mixing bowl, combine the lentils, red onion, red bell pepper, cucumber, kalamata olives, and feta cheese.

  3. In a small bowl, whisk together the red wine vinegar, oregano, salt, and pepper.

  4. Pour the dressing over the salad. Mix well to combine.

  5. Chill for at least 30 minutes before serving.
