Ingredients

  • 4 medium potatoes, cubed
  • 1/2 red onion, finely chopped
  • 2 celery stalks, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup vegan mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Boil potatoes in salted water until tender, about 15-20 minutes. Drain and cool slightly.

  2. In a large bowl, combine cooled potatoes, red onion, celery, and parsley.

  3. In a small bowl, whisk together vegan mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.

  4. Pour dressing over potato mixture and toss until well combined.

  5. Chill in the refrigerator for at least 30 minutes before serving.
