These cute macaroon nests are perfect for Easter celebrations and are made vegan-friendly.

Ingredients

  • 2 cups shredded coconut
  • 1/2 cup agave syrup
  • 1/4 cup aquafaba
  • 1/4 cup flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 4 tbsp dark chocolate chips
  • vegan-friendly candy eggs

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a bowl, mix together shredded coconut, agave syrup, aquafaba, flour, vanilla extract, and salt until well combined.

  3. Take handfuls of mixture and form into small nests on a lined baking tray.

  4. Bake in the preheated oven for 15-20 minutes, until golden brown.

  5. Once the nests have cooled, melt dark chocolate chips in a bowl over boiling water and spoon into the nests, then add vegan-friendly candy eggs on top.

  6. Allow chocolate to cool and set before serving.
