How To Make Polish Sausage and Potato Salad
A hearty and flavorful salad featuring classic Polish sausage and chunks of tender potatoes.
Serves:
Ingredients
- 4 medium red potatoes, chopped into bite-sized pieces
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/2 pound Polish sausage, sliced into rounds
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
Instructions

Bring a pot of salted water to a boil. Add potatoes and cook until tender, about 10-12 minutes. Drain and let cool.

In a large pan or skillet, heat olive oil over medium-high heat. Add sausage and cook until browned and crisp, about 4-5 minutes.

In a large bowl, whisk together white wine vinegar, Dijon mustard, salt, and pepper.

Add cooked potatoes, sausage, diced onion, diced bell pepper, and chopped parsley to the bowl with the dressing. Toss to combine.

Serve immediately or chill in the refrigerator for up to 2 hours before serving.
