How To Make Tea-Smoked Salmon with Herb Mayonnaise

- 4 salmon fillets
- 2 tablespoons loose black tea leaves
- 1 tablespoon brown sugar
- 1 tablespoon rice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 cup mayonnaise
- 1 tablespoon chopped fresh herbs (such as dill, parsley, or chives)
- 1 tablespoon lemon juice
- Salt and pepper to taste

Preheat your grill or stovetop smoker.

In a small bowl, combine the tea leaves, brown sugar, rice, 1 teaspoon salt, black pepper, garlic powder, and paprika.

Place the tea mixture in the bottom of the smoker or in a foil packet on the grill.

Place the salmon fillets on a grill rack or in a smoker basket and place over the tea mixture.

Close the lid of the smoker or cover the grill and let the salmon smoke for about 15-20 minutes, or until cooked through and flaky.

While the salmon is smoking, prepare the herb mayonnaise. In a bowl, combine the mayonnaise, chopped fresh herbs, lemon juice, salt, and pepper. Stir until well mixed.

Serve the tea-smoked salmon hot, topped with a dollop of the herb mayonnaise. Enjoy!
