Ingredients

  • 4 large russet potatoes, peeled and diced
  • 6 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Instructions

  1. In a large skillet, cook bacon until crispy. Remove from skillet and set aside.

  2. Add diced potatoes to the skillet with bacon grease and cook until golden brown and crispy on all sides.

  3. Add onions, garlic, and dried rosemary to the skillet and cook until onions are translucent.

  4. Return bacon to skillet and season with salt and pepper to taste.

  5. Serve hot.
