How To Make Russet Potato and Cheese Pierogi Recipe

Delicious pierogi filled with creamy mashed potatoes and cheddar cheese.

Serves:

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 3/4 cup warm water
  • 2 large russet potatoes, peeled and quartered
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together flour and salt. Add warm water and stir until dough forms.

  2. Knead dough for 5 minutes, then cover and let rest for 10 minutes.

  3. Boil potatoes until soft, then mash with cheese and butter. Season with salt and pepper to taste.

  4. Roll out dough to 1/8 inch thickness and cut into circles.

  5. Place a spoonful of potato mixture in the center of each circle, then fold and pinch edges to seal.

  6. Boil pierogi in salted water for 3-4 minutes until they float to the surface.

  7. Serve with sour cream or your favorite toppings.
