How To Make Full English Potato Cake

Ingredients

  • 4 large potatoes
  • 4 slices of bacon
  • 1 onion, diced
  • 1 tomato, sliced
  • 4 eggs
  • Salt and pepper, to taste
  • 1 tbsp vegetable oil

Instructions

  1. Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze out any excess moisture.

  2. Heat the vegetable oil in a large skillet over medium heat. Add the grated potatoes and spread them evenly in the pan. Cook for about 10 minutes, pressing them down occasionally with a spatula, until they start to turn golden brown and crispy.

  3. In a separate pan, cook the bacon until crispy. Remove from pan and set aside.

  4. In the same pan, sauté the diced onion until translucent. Add the sliced tomato and cook for another 2 minutes.

  5. Make four wells in the grated potatoes and crack an egg into each well. Season with salt and pepper. Cook for about 5 minutes, until the egg whites are set but the yolks are still slightly runny.

  6. Carefully transfer the potato cake onto a serving plate. Top with the cooked bacon, sautéed onion and tomato mixture.

  7. Serve hot and enjoy!
