How To Make Za’atar & Herb Potato Latkes

Ingredients

  • 4 large potatoes, peeled and grated
  • 1 small onion, grated
  • 1/4 cup all-purpose flour
  • 2 tablespoons za’atar spice
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • Vegetable oil, for frying

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

  2. In a large bowl, combine the grated potatoes, grated onion, flour, za’atar spice, dried parsley, garlic powder, salt, black pepper, and beaten eggs. Mix well until all ingredients are evenly combined.

  3. Heat a generous amount of vegetable oil in a large frying pan over medium heat.

  4. Take a heaping scoop of the potato mixture and shape it into a flat patty. Place the patty into the hot oil and flatten it slightly with the back of a spatula. Repeat with the remaining potato mixture, making sure not to overcrowd the pan.

  5. Fry the latkes for about 3-4 minutes on each side, or until they are golden brown and crispy. Use a slotted spatula to transfer the cooked latkes to a paper towel-lined plate to drain excess oil.

  6. Serve the Za’atar & Herb Potato Latkes hot, garnished with additional za’atar spice if desired.
