Ingredients

  • 4 large potatoes, cut into chunks
  • 4 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1 can (400g) chopped tomatoes
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Place the potato chunks in a large pot of salted boiling water and cook for about 10 minutes, until slightly tender. Drain and set aside.

  3. Heat 2 tbsp of olive oil in a large non-stick pan over medium heat. Add the onion and garlic and cook until softened.

  4. Stir in the smoked paprika and chili powder.

  5. Add the chopped tomatoes and tomato paste. Season with salt and pepper. Cook for about 10 minutes, stirring occasionally.

  6. Meanwhile, heat the remaining 2 tbsp of olive oil in a separate large non-stick pan over medium-high heat. Add the cooked potatoes and fry until golden brown and crispy, about 10-15 minutes.

  7. Transfer the potatoes to a plate lined with paper towels to remove excess oil.

  8. Serve the fried potatoes with the spicy tomato sauce. Garnish with fresh chopped parsley.
