Ingredients

  • 4 large potatoes, peeled and cut into cubes
  • 1/4 cup olive oil
  • 1/2 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tsp paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • for the aioli:
  • 1/2 cup mayonnaise
  • 1 clove of garlic, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the potato cubes with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 30-35 minutes until golden and crispy.

  3. In a saucepan, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.

  4. Add the diced tomatoes, paprika, cayenne pepper, salt, and pepper to the saucepan. Simmer for 10-15 minutes, until the sauce thickens.

  5. In a separate bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and pepper to make the aioli.

  6. To serve, place the roasted potatoes on a platter and drizzle with the tomato sauce. Serve the aioli on the side for dipping.
