  • 4 large potatoes, peeled and cut into bite-sized cubes
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1/4 tsp cayenne pepper (adjust according to your spice preference)
  • 2 cloves of garlic, minced
  • 1 cup tomato sauce
  • 1 tsp smoked paprika
  • 1/2 tsp sugar
  • Salt and pepper to taste
  • Chopped parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the potatoes with olive oil, salt, paprika, and cayenne pepper until evenly coated.

  3. Spread the potatoes on a baking sheet in a single layer. Bake for 30 minutes or until golden and crispy, flipping halfway through.

  4. In a small saucepan, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  5. Add tomato sauce, smoked paprika, sugar, and season with salt and pepper. Simmer for 10 minutes, stirring occasionally.

  6. Once the potatoes are cooked, transfer them to a serving dish and drizzle with the spicy tomato sauce.

  7. Garnish with chopped parsley.

  8. Serve hot and enjoy!
