  • 4 large potatoes
  • 3 tbsp olive oil
  • 2 tsp dried sage
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. Scrub the potatoes clean and pat them dry with a paper towel.

  3. Cut slits into the potatoes, leaving the bottom intact, to create the “hedgehog” shape. Be careful not to cut all the way through.

  4. In a small bowl, mix together the olive oil, dried sage, garlic powder, paprika, salt, and pepper.

  5. Brush the seasoned oil mixture all over the potatoes, making sure to get it into the slits.

  6. Place the potatoes on the prepared baking sheet and bake for 40 minutes, or until they are crispy and golden brown.

  7. Serve the crispy hedgehog spuds as a delicious appetizer or side dish.
