Ingredients

  • 2 racks of lamb
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 kg new potatoes, thinly sliced
  • 2 medium onions, thinly sliced
  • 4 sprigs of fresh thyme
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the racks of lamb with salt and pepper on all sides.

  3. Heat the olive oil in a large skillet over high heat. Sear the lamb until browned, about 2 minutes per side. Transfer to a baking sheet.

  4. In a separate bowl, combine the sliced potatoes, onions, thyme, heavy cream, and half of the Parmesan cheese. Season with salt and pepper to taste.

  5. Spread the potato mixture evenly in a baking dish. Place the racks of lamb on top.

  6. Sprinkle the remaining Parmesan cheese over the lamb.

  7. Bake for 35-40 minutes, or until the lamb reaches an internal temperature of 145°F (63°C) for medium-rare.

  8. Let the lamb rest for 5 minutes before slicing and serving with the gratin.
