How To Make Slow Cooker Sausage Casserole

Serves:

Ingredients

  • 1 lb of sausages
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 can (14 oz) of diced tomatoes
  • 1 tbsp of tomato paste
  • 1 tsp of dried thyme
  • 1 tsp of dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 cups of chicken broth

Instructions

  1. In a skillet, brown the sausages over medium heat until cooked through. Transfer them to a slow cooker.

  2. In the same skillet, sauté the onions and garlic until they become translucent. Add them to the slow cooker.

  3. Add the carrots, celery, bell pepper, diced tomatoes, tomato paste, dried thyme, dried rosemary, bay leaf, salt, and pepper to the slow cooker.

  4. Pour in the chicken broth and stir everything together.

  5. Cover the slow cooker and cook on low heat for 5 hours.

  6. Remove the bay leaf before serving.

  7. Serve the sausage casserole hot with crusty bread or steamed rice.
