How To Make Middle Eastern Bread & Goat’s Cheese Salad

Ingredients

  • 4 slices of Middle Eastern bread (such as pita or lavash)
  • 200g goat’s cheese
  • 2 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh parsley leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Cut the Middle Eastern bread into bite-sized pieces and place on a baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for 5 minutes, or until crispy.

  3. In a large bowl, combine the mixed salad greens, cucumber, cherry tomatoes, red onion, mint leaves, and parsley leaves.

  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.

  5. Add the crispy bread and crumble the goat’s cheese over the salad mixture.

  6. Drizzle the dressing over the salad and toss gently to combine.

  7. Serve immediately and enjoy!
