Ingredients
- 2 lbs pork ribs
- 1 cup ketchup
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper to taste
- For the Pomegranate Salsa:
- 1 cup pomegranate seeds
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, seeded and finely chopped
- Juice of 1 lime
- Salt to taste
Instructions

Preheat the oven to 325°F (165°C).

In a bowl, mix together the ketchup, brown sugar, soy sauce, apple cider vinegar, garlic, ginger, salt, and pepper to make the sweet and sour glaze.

Place the ribs on a baking sheet and brush them with the sweet and sour glaze, reserving some for later.

Bake the ribs in the preheated oven for 1.5-2 hours, or until they are tender and the glaze has caramelized.

Meanwhile, prepare the pomegranate salsa by combining the pomegranate seeds, red onion, cilantro, jalapeno, lime juice, and salt in a bowl. Mix well and set aside.

Once the ribs are done, remove them from the oven and brush them with the remaining sweet and sour glaze. Allow them to rest for a few minutes before serving.

Serve the ribs with a generous spoonful of pomegranate salsa on top. Enjoy!
