How To Make Glazed Chicken over Winter Mash

Instead of using regular chicken breasts, switch them for some chicken cutlets! They’re halved fillets, so they’re thinner and much easier to cook evenly. Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/4 cup balsamic glaze
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 4 cups mashed potatoes
  • 1 cup cooked vegetables (such as carrots, peas, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium-high heat.

  3. Season the chicken breasts with salt, pepper, and dried thyme.

  4. Sear the chicken in the hot skillet for 2-3 minutes on each side, until browned.

  5. Transfer the chicken to a baking dish and brush each breast with balsamic glaze.

  6. Place the dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.

  7. Meanwhile, reheat the mashed potatoes and cooked vegetables in a separate pot.

  8. Serve the glazed chicken over the winter mash, and garnish with additional balsamic glaze if desired.
