How To Make Italian-Style Roast Pork with Crispy Crackling

Ingredients
- 1.5 kg (3.3 lbs) pork belly, scored
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 2 sprigs rosemary, chopped
- 1 tbsp fennel seeds
- Salt, to taste
- Black pepper, to taste
Instructions

Preheat the oven to 220°C (425°F).

In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, fennel seeds, salt, and black pepper.

Rub the mixture all over the scored pork belly, making sure to get it into all the cracks.

Place the pork belly, skin-side up, on a wire rack in a roasting pan.

Roast the pork in the preheated oven for 30 minutes, or until the skin starts to blister and crackle.

Reduce the oven temperature to 160°C (320°F) and continue to roast the pork for another 2 hours, or until the meat is tender and the crackling is crispy.

Remove the pork from the oven and let it rest for 10 minutes before slicing.
