How To Make Red Wine Poached Halibut with Bacon & Mushrooms

Ingredients
- 4 halibut fillets (6 oz each)
- 4 slices of bacon
- 8 oz mushrooms, sliced
- 1 cup red wine
- 1 cup chicken broth
- 1 shallot, diced
- 2 cloves of garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large skillet, cook the bacon until crispy. Remove from the skillet and crumble it into small pieces.

In the same skillet, melt the butter over medium heat. Add the shallot and garlic, and sauté until softened.

Add the sliced mushrooms to the skillet and cook until they release their moisture and are tender.

Pour in the red wine and chicken broth. Bring to a simmer.

Season the halibut fillets with salt and pepper, then carefully place them into the skillet.

Simmer the halibut in the red wine mixture for about 10-12 minutes, or until cooked through and flaky.

Remove the halibut from the skillet and transfer to serving plates.

Spoon the mushrooms and some of the red wine sauce over the halibut.

Top with the crumbled bacon and sprinkle with fresh parsley.
