Ingredients

  • 1 pack Enoki mushrooms
  • 1/2 red onion, sliced
  • 1/2 cucumber, sliced
  • 1/4 cup chopped cilantro
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp ginger, grated
  • Salt and pepper to taste

Instructions

  1. Rinse and separate the enoki mushrooms.

  2. In a large bowl, combine mushrooms, red onion, cucumber, and cilantro.

  3. In a separate bowl, whisk sesame oil, soy sauce, rice vinegar, honey, and ginger.

  4. Pour dressing over the salad and toss until well coated.

  5. Season with salt and pepper to taste.
