Ingredients
- 1 pack Enoki mushrooms
- 1/2 red onion, sliced
- 1/2 cucumber, sliced
- 1/4 cup chopped cilantro
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 tsp ginger, grated
- Salt and pepper to taste
Instructions

Rinse and separate the enoki mushrooms.

In a large bowl, combine mushrooms, red onion, cucumber, and cilantro.

In a separate bowl, whisk sesame oil, soy sauce, rice vinegar, honey, and ginger.

Pour dressing over the salad and toss until well coated.
