How To Make Home Hog Roast with Chilli Pig Sauce

- 1 whole hog, approximately 20-25 lbs
- 2 tablespoons paprika
- 2 tablespoons brown sugar
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper
- 1 cup apple cider vinegar
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons soy sauce
- 2 tablespoons Dijon mustard
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions

Preheat your grill or smoker to 250°F (120°C).

In a small bowl, mix together the paprika, brown sugar, salt, black pepper, garlic powder, onion powder, and cayenne pepper to create a dry rub.

Pat the hog dry with paper towels. Rub the dry rub all over the hog, making sure to get into all the crevices.

Place the hog on the grill or smoker and cook for approximately 4 hours, or until the internal temperature reaches 160°F (70°C).

While the hog is cooking, make the chilli pig sauce. In a saucepan, combine the apple cider vinegar, ketchup, brown sugar, Worcestershire sauce, soy sauce, Dijon mustard, chili powder, garlic powder, and onion powder. Bring to a simmer over medium heat and let it cook for 10 minutes, stirring occasionally.

Once the hog is cooked, remove it from the grill or smoker and let it rest for 20 minutes.

Using two forks or your hands, shred the hog into bite-sized pieces.

Serve the hog roast with the chilli pig sauce on the side.
