Ingredients

  • 4 medium potatoes, diced
  • 8 ounces mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 eggs
  • ½ cup shredded cheddar cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook until golden brown and tender, about 8-10 minutes.

  3. Add the sliced mushrooms, diced onion, and minced garlic to the skillet. Cook for an additional 5 minutes until the mushrooms are softened and the onions are translucent.

  4. Season with salt and black pepper.

  5. Transfer the potato and mushroom mixture to a greased baking dish.

  6. Create 6 small wells in the mixture and crack an egg into each well.

  7. Sprinkle the shredded cheddar cheese evenly over the eggs and vegetables.

  8. Bake in the preheated oven for 12-15 minutes or until the eggs are cooked to your desired level of doneness.

  9. Garnish with fresh parsley before serving.
