How To Make Baked Eggs with Potatoes, Mushrooms & Cheese

Ingredients
- 4 medium potatoes, diced
- 8 ounces mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 6 eggs
- ½ cup shredded cheddar cheese
- Fresh parsley, for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook until golden brown and tender, about 8-10 minutes.

Add the sliced mushrooms, diced onion, and minced garlic to the skillet. Cook for an additional 5 minutes until the mushrooms are softened and the onions are translucent.

Season with salt and black pepper.

Transfer the potato and mushroom mixture to a greased baking dish.

Create 6 small wells in the mixture and crack an egg into each well.

Sprinkle the shredded cheddar cheese evenly over the eggs and vegetables.

Bake in the preheated oven for 12-15 minutes or until the eggs are cooked to your desired level of doneness.
