Ingredients

  • 1.5 pounds of roast beef
  • Salt and pepper, to taste
  • 2 tablespoons of olive oil
  • 1 red chili, finely chopped
  • 2 tablespoons of pine nuts
  • 1/4 cup of fresh parsley, chopped
  • 2 tablespoons of lemon juice
  • 1 clove of garlic, minced
  • 1 teaspoon of Dijon mustard
  • 1 tablespoon of honey

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the roast beef with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the roast beef on all sides until browned.

  3. Transfer the roast beef to a baking dish and roast in the preheated oven for about 40 minutes for medium-rare doneness.

  4. Meanwhile, in a small pan, toast the pine nuts until golden brown.

  5. In a bowl, combine the chopped chili, toasted pine nuts, chopped parsley, lemon juice, minced garlic, Dijon mustard, and honey. Mix well to combine.

  6. Remove the roast beef from the oven and let it rest for 10 minutes before slicing.

  7. Slice the roast beef and arrange it on a serving platter. Drizzle the chilli, pine nut, and parsley dressing over the beef.

  8. Serve the roast beef platter with roasted vegetables or a side salad.
