How To Make Crab & Sriracha Mayo Rainbow Rolls

Ingredients
- 8 sheets of rice paper
- 1 cup of imitation crab meat, shredded
- 1 avocado, thinly sliced
- 1 carrot, julienned
- 1 cucumber, julienned
- 1 bell pepper, thinly sliced
- 1/4 cup of fresh mint leaves
- 1/4 cup of fresh cilantro leaves
- 1/4 cup of sriracha mayo
- Soy sauce, for serving
Instructions

Fill a large bowl with warm water. Dip one sheet of rice paper into the water for a few seconds until soft and pliable. Place the rice paper on a clean surface.

Arrange a small amount of crab meat, avocado slices, carrot, cucumber, bell pepper, mint leaves, and cilantro leaves in the center of the rice paper.

Fold the bottom of the rice paper over the filling, then fold in the sides and roll tightly to form a cylinder. Repeat with the remaining ingredients.

Slice the rolls in half and arrange on a serving platter. Drizzle with sriracha mayo.

Serve the rainbow rolls with soy sauce for dipping.
