How To Make Sesame Salmon Subs with Cucumber Pickle

Ingredients
- 4 salmon fillets
- 2 tbsp sesame seeds
- Salt and pepper to taste
- 4 sub rolls
- 1 cup sliced cucumber
- 1/4 cup rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 1/4 cup mayonnaise
- 1 tbsp sriracha sauce
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Season salmon fillets with salt and pepper. Sprinkle sesame seeds on both sides of the salmon.

Place the salmon on the prepared baking sheet and bake for 10 minutes or until cooked through.

In a small bowl, mix together rice vinegar, sugar, and salt. Add sliced cucumber and let it marinate for 10 minutes.

In another small bowl, combine mayonnaise and sriracha sauce to make a spicy mayo.

Split the sub rolls in half. Spread spicy mayo on both sides of the rolls.

Place a cooked salmon fillet on each roll. Top with marinated cucumber slices.
