How To Make Whole 30 Sweet Potato Shepherd’s Pie

A savory and healthy twist on a classic comfort food, made with ground meat, veggies, and topped with sweet potato.

Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 lb ground turkey or beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 cup frozen peas
  • 1 tbsp coconut oil
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. Place sweet potatoes in a pot, cover with water, and boil until tender (about 20 minutes). Drain and mash with a fork.

  3. In a large skillet, heat coconut oil over medium heat and add ground meat. Cook until browned, then add chopped onion, minced garlic, chopped carrot, and chopped celery. Cook until vegetables are tender.

  4. Add frozen peas, thyme, rosemary, salt, and pepper, and cook for 5 more minutes.

  5. Transfer meat and vegetable mixture to a baking dish, and spread mashed sweet potatoes on top.

  6. Bake for 20-25 minutes, until heated through and sweet potatoes are slightly browned on top.
