Ingredients

  • 4 large tomatoes
  • 1 cup cooked quinoa
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup shredded cheese (such as cheddar or mozzarella)
  • 2 tablespoons chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut off the tops of the tomatoes and scoop out the seeds and pulp.

  3. In a bowl, combine cooked quinoa, bell peppers, onions, cheese, basil, salt, and pepper.

  4. Fill the hollowed tomatoes with the quinoa mixture.

  5. Place the stuffed tomatoes on a baking dish and bake for 20-25 minutes, or until the tomatoes are tender and the filling is heated through.

  6. Remove from the oven and let cool for a few minutes before serving.
