Ingredients
- 2 bunches of fresh spinach
- 2 tbsp butter
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1/2 cup celery, chopped
- 1/2 cup green bell pepper, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/2 cup evaporated milk
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
Instructions

Preheat the oven to 350°F (175°C).

Wash the spinach thoroughly and remove any tough stems. Chop the leaves into small pieces.

In a large skillet, melt the butter over medium heat. Add the onion, garlic, celery, and bell pepper. Cook until the vegetables are softened, about 5 minutes.

Add the chopped spinach to the skillet and cook until wilted, about 3 minutes. Stir in the salt, black pepper, and cayenne pepper.

Pour in the evaporated milk and stir well. Cook for another 2 minutes.

Transfer the spinach mixture to a baking dish. Sprinkle the breadcrumbs and Parmesan cheese evenly over the top.

Bake in the preheated oven for 15 minutes, until the top is golden and crispy.
