Ingredients

  • 2 bunches of fresh spinach
  • 2 tbsp butter
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1/2 cup celery, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/2 cup evaporated milk
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Wash the spinach thoroughly and remove any tough stems. Chop the leaves into small pieces.

  3. In a large skillet, melt the butter over medium heat. Add the onion, garlic, celery, and bell pepper. Cook until the vegetables are softened, about 5 minutes.

  4. Add the chopped spinach to the skillet and cook until wilted, about 3 minutes. Stir in the salt, black pepper, and cayenne pepper.

  5. Pour in the evaporated milk and stir well. Cook for another 2 minutes.

  6. Transfer the spinach mixture to a baking dish. Sprinkle the breadcrumbs and Parmesan cheese evenly over the top.

  7. Bake in the preheated oven for 15 minutes, until the top is golden and crispy.

  8. Serve hot as a side dish.
