  • 4 medium potatoes, peeled and diced
  • 2 leeks, white and light green parts only, thinly sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1/4 cup heavy cream (optional)
  • Chopped fresh chives, for garnish

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.

  2. Add the leeks and potatoes to the pot, and cook for another 5 minutes.

  3. Pour in the vegetable broth, and add the bay leaf and dried thyme. Season with salt and pepper to taste.

  4. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the potatoes are tender.

  5. Remove the bay leaf from the soup. Use an immersion blender to puree the soup until smooth and creamy. Alternatively, you can transfer the soup to a blender and blend in batches.

  6. Stir in the heavy cream, if using. Adjust the seasoning if needed.

  7. Ladle the soup into bowls and garnish with chopped fresh chives.

  8. Serve hot and enjoy!
