Ingredients

  • 1 pound new potatoes, halved
  • 1 cup green beans, trimmed and cut into bite-sized pieces
  • 1 cup cress
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Place the potatoes in a large pot of salted water. Bring to a boil and cook for about 10 minutes, or until tender. Drain and set aside.

  2. In a separate pot of salted water, blanch the green beans for about 3 minutes. Drain and set aside.

  3. Heat the olive oil in a pan over medium heat. Add the potatoes and green beans and cook for 5 minutes, or until lightly browned.

  4. Transfer the potatoes and beans to a serving dish. Drizzle with lemon juice and season with salt and pepper.

  5. Sprinkle the cress over the top and serve.
