Ingredients
- 1 pound new potatoes, halved
- 1 cup green beans, trimmed and cut into bite-sized pieces
- 1 cup cress
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

Place the potatoes in a large pot of salted water. Bring to a boil and cook for about 10 minutes, or until tender. Drain and set aside.

In a separate pot of salted water, blanch the green beans for about 3 minutes. Drain and set aside.

Heat the olive oil in a pan over medium heat. Add the potatoes and green beans and cook for 5 minutes, or until lightly browned.

Transfer the potatoes and beans to a serving dish. Drizzle with lemon juice and season with salt and pepper.

Sprinkle the cress over the top and serve.
