How To Make New Potato & Green Bean Salad

Ingredients
- 1 pound new potatoes, halved
- 8 ounces green beans, trimmed
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

In a large pot, bring water to a boil. Add the new potatoes and cook for 10-12 minutes until tender. Drain and let cool.

In the same pot, bring more water to a boil. Add the green beans and cook for 2-3 minutes until crisp-tender. Drain and immediately transfer to ice water to stop the cooking process. Drain well.

In a large bowl, combine the potatoes, green beans, red onion, and dill.

In a small bowl, whisk together the olive oil, Dijon mustard, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to coat.

Serve the salad chilled or at room temperature.
