Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion and garlic and cook until slightly softened.

  3. Add the carrots, celery, red and yellow bell pepper, and zucchini and cook for 5 minutes.

  4. Add the vegetable broth, diced tomatoes, dried basil, dried oregano, salt, and black pepper.

  5. Bring the soup to a simmer and cook for 20-25 minutes or until the vegetables are tender.

  6. Serve hot and enjoy!
