How To Make Mixed Vegetable Soup Recipe
A warm and hearty soup made with a variety of fresh vegetables and flavorful spices.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic and cook until slightly softened.

Add the carrots, celery, red and yellow bell pepper, and zucchini and cook for 5 minutes.

Add the vegetable broth, diced tomatoes, dried basil, dried oregano, salt, and black pepper.

Bring the soup to a simmer and cook for 20-25 minutes or until the vegetables are tender.
