This mixed vegetable stir-fry is a perfect healthy meal that’s quick to make and full of flavors.

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 carrots, peeled and sliced
  • 1 broccoli head, chopped into florets
  • 2 garlic cloves, minced
  • 1 tsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper, to taste

Instructions

  1. Heat oil in a large pan over medium-high heat.

  2. Add onion and stir-fry for 1-2 minutes.

  3. Add bell peppers, carrots, broccoli, garlic, and ginger. Stir-fry for 3-4 minutes or until vegetables are tender-crisp.

  4. Add soy sauce, sesame oil, salt, and pepper and stir to combine.

  5. Serve hot with rice or noodles.
