How To Make Lentil and Vegetable Bean Soup

A hearty and healthy soup filled with lentils, veggies, and beans. Perfect for a cold day.

Serves:

Ingredients

  • 1 cup green lentils, rinsed and drained
  • 1 can mixed beans, drained and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cook until onion is translucent.

  2. Add celery and carrots and cook until softened, about 5 minutes.

  3. Add lentils, mixed beans, vegetable broth, cumin, and paprika.

  4. Bring to a boil and then reduce heat to low and let simmer for 30 minutes or until lentils are tender.

  5. Season with salt and pepper to taste.
