Ingredients

  • 1 small red cabbage, thinly sliced
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 2 apples, peeled, cored, and thinly sliced
  • 1 tablespoon juniper berries, crushed
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add onions and cook until softened.

  2. Add crushed juniper berries and cook for another minute until fragrant.

  3. Add sliced apples to the pan and cook for 3-4 minutes until slightly softened.

  4. Add red cabbage and stir well to combine with the onions and apples. Cook for about 10 minutes until cabbage starts to wilt.

  5. Stir in apple cider vinegar and honey. Season with salt and pepper to taste.

  6. Cover the pan and simmer for 15-20 minutes until the cabbage is tender, stirring occasionally.

  7. Serve hot as a side dish with roasted meats or sausages.
