How To Make Warm Salad of Red Cabbage, Black Pudding & Apple

Ingredients
- 1 small red cabbage, finely shredded
- 200g black pudding, sliced
- 2 apples, cored and thinly sliced
- 1 red onion, thinly sliced
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Heat the olive oil in a large frying pan over medium heat. Add the black pudding and cook until crispy on both sides. Remove from the pan and set aside.

In the same pan, add the red onion and cook for 2-3 minutes until softened.

Add the red cabbage and apple slices to the pan and cook for 8-10 minutes, stirring occasionally, until the cabbage is wilted and the apples are soft.

Drizzle the apple cider vinegar over the cabbage mixture and season with salt and pepper. Stir to combine.

Transfer the warm salad to a serving dish and top with the crispy black pudding slices.

Garnish with fresh parsley and serve immediately.
