Ingredients

  • 1 small red cabbage, thinly sliced
  • 2 apples, peeled, cored, and chopped
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 cup of apple cider
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of brown sugar
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic and sauté until softened.

  2. Add the sliced red cabbage and chopped apples to the pot. Stir until well combined.

  3. Pour in the apple cider, apple cider vinegar, and brown sugar. Season with salt and pepper.

  4. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook for 1 hour, stirring occasionally.

  5. After 1 hour, remove the lid and let the cabbage cook for an additional 15 minutes to allow any excess liquid to evaporate.

  6. Taste and adjust the seasoning if needed. Serve hot.
